Sichuan cuisine specializes in chili and hot pepper, and is best known for its aromatic and spicy sauces. The food often arrives glistening under a layer of bright red chili oil. Locals explain that chilies are warming in winter and cooling in summer, and, according to Chinese medicine, dispel "wet" illnesses brought on by damp or humid conditions.
Ingredients are edible wild herbs, and meat of domestic animals and birds. The most famous dishes from the region include spicy chicken with peanuts (Gong bao ji ding), and spiced bean curd with chili (Ma po Dou fu).
